· Move the food to the sides of the grill if you need to. By doing this, your food would not be over the coal. As all charcoal grills have a tiny vent to adjust the flow of air in as well as out. You can close this vent to drop the temperature. When the vent remains closed, the air will not flow into the charcoal grill.
Cooking temperatures are adjusted by increasing and decreasing the amount of air flow to the charcoal. Opening the vents wide results in a hotter fire. Partially closing them incrementally cools the fire and lowers the cooking temperature. Here’s a gauge for how wide to open air vents to achieve specific temperature ranges. 5% ≈ 225°F
· Step 1 – Open all the air vents all the way, leave the lid of the grill open and pour charcoal into the firebox. Then put the electric lighter on the charcoal and wait for smoke to appear and for the charcoal to get a gray layer on top – it usually takes about 10-15 minutes.

This will work well in many cases and on many grills, but not on my grill. I had to close the top vent to about 50% to even be able to lower the temperature and keep it consistent.
